In his explanation, he called out how customers often set unrealistic expectations for the quality they expect versus the price they’re willing to pay.

Chef Viveq Pawar of Roxie Bengaluru got real in one of his latest Instagram reels. He called out the unrealistic expectations that a lot of customers have when it comes to food, its quality and the price they’re willing to pay for it.
He starts the video by saying that many expect him to sell pizza or pasta for a mere ₹250, ₹300 or ₹350. He then went on to talk about how it is common for similarly priced dishes to receive subpar ratings with customers complaining about the food being mediocre.
He says, “Who is kidding, you or me?” Then talks about how each ingredient of his dish is of an extremely premium quality. This means that he, too, pays a high price for these ingredients. On the contrary, cheaper dishes may employ cheaper ingredients of poorer quality.

One of the biggest challenges for restaurateurs, based on what the chef said, is to strike a balance between quality, taste and profit. That, according to Chef Viveq, is why the pizzas he serves cannot be priced cheaply. While a large majority of the comments section lauded his explanation, there were a few who raised some pertinent concerns.
One commenter mentioned that the high price is justified when the quality and taste of the ingredients are good. However, a number of places simply markup the price while still using poor-quality ingredients. This to a lot of people is unjustified.
