Carrots have beta-carotene, which the body can convert to Vitamin A, an important nutrient for the eyes, the immune system, and the skin. However, as D’Souza reminds us, when you eat raw carrots, your body absorbs only 3 to 4 percent of the beta-carotene. Cooking, however, raises absorption to nearly 40 percent.

This means that carrots can be made healthier by steaming, boiling, or pan-frying. He also recommends adding a bit of ghee or oil to cooked carrots because Vitamin A is fat-soluble and can be easily absorbed by the body.
