We all have a very special corner in our hearts for Gajar Ka Halwa. Rich in ghee, dry fruits, khoya, and the deliciousness of freshly grated carrots, it is too hard to resist even a small mouthful of this dessert. Well, there is a special sweet treat massively famous in North India named Kali Gajar ka Halwa and it is available only during 2 months of the winter season. You can gorge on a feast of this finger-licking dessert only during December & January.

These two months are when you will get seasonal black carrots easily in some parts of North India. Being a staple ingredient of the winter season, kali gajar ka halwa is readily available in some sweet shops in cities such as Allahabad, Lucknow, and Varanasi. One of Lucknow’s renowned shops that serves this winter delight is Mukhtar Ahmed Sweet House. When it comes to the preparation of this black carrot dessert, the method is quite similar to that of basic gajar ka halwa. The primary difference between both the recipes is the hero ingredient— Carrots. From the appearance to the taste, orange and black carrots are quite different from each other. Recipe For The Unique Carrot Dessert:

Taking to YouTube, Chef Ranveer Brar has shared a video of Kali Gajar ka Halwa. Just like his other recipes, this video shows all the steps of cooking the dessert and also describes the entire method.

Ingredients:

  • Black Carrots
  • Milk
  • Ghee
  • Almonds
  • Pistachios
  • Green Cardamom
  • Dry Ginger Powder
  • Salt
  • Sugar
  • Honey
  • Vinegar
  • Silver Vark
  • Pomegranate
  • Mint Leaves

Method:

  • Start by grating black carrots and cooking them in a pressure cooker. Add milk and ghee to it and mix everything before starting to cook.
  • Take a kadai, add ghee and carrots, and cook for some time.
  • Next, add sugar and cook till sugar granules melt completely.
  • After this, add a pinch of salt, some vinegar, honey, green cardamom, and dry ginger powder.
  • Keep cooking continuously till you see the halwa becoming dry and getting the desired texture.
  • In the last cooking step, add some fried and chopped almonds and pistachios and continue cooking for a couple of more minutes.
  • Once done, you can simply enjoy eating or even garnish with pomegranate, mint leaves, and silver vark and then relish.
