Alongside the glitz and glamour of the red carpet and the screenings of the latest films in the Cannes Film Festival, the festival also features a food showcase, a significant draw for foodies and film enthusiasts alike. In addition to these, a magnificent meal awaits the celebrities at the French Riviera, and Cannes 2023 is no exception. Well, this year, Chef Prateek Sadhu will be cooking up some tasty treats in the India Pavilion for the Inaugural Dinner at Cannes.

Chef Prateek Sadhu has been invited to the 2023 Cannes Film Festival to lead the catering at the inaugural dinner hosted by the Minister of Information and Broadcasting at the India Pavilion. Think of an inventive and contemporary approach to Indian cuisine with unexpected combinations of flavours and textures. The curated dinner is part of a collaboration with Diageo India and single-malt brand Godawan. The menu blends the best in Indian and French cuisine to create a culinary experience that is one-of-a-kind.

Speaking to Harpers Bazaar India, the chef also hinted at the dishes he would be cooking at Cannes. The goal is to present India in 2023, not 1980, and to influence the dialogue surrounding Indian cuisine, according to him. Hinting at the menu, he says it consists of six to seven courses, and the objective is to cover every area with meals that were influenced by his trips around India. In fact, he had actually flown down with 80 kilogrammes of spices and pickles from India.

Well, Sadhu also gave an insight into the dishes and their preparation. Here’s what you can expect:

  • Tungrymbai: made out of smoked and fermented soya beans and then cooked. This is from Meghalaya and is typical of the Khasi community of the region.
  • Putharo: Tungrymbai will be paired with Putharo,  a traditional bread from the region.
  • Millet Thoran: a Kerala-based dish
  • Millet pulao with a Malvani-style Sole Fish (a French delicacy)
  • Potato Koshimbir: which is a Marathi salad
  • There are even lots of sweets and mithais: from the Bengali Sandesh, Maharashtrian Chikki, Mysore Pak
  • Beverages will include Kashmiri Kahwa and homegrown coffee from Karnataka.

For the unversed, Chef Prateek Sadhu has made a name for his inventive approach in the culinary world. He was the executive chef of Masque, a fine-dining restaurant in Mumbai that has received critical acclaim for its inventive and contemporary approach to Indian cuisine.

Cannes 2022 was a year for India. Renowned Chef Manu Chandra prepared the formal dinner party hosted for the celebrity guests at Cannes Film Festival 2022 from the Indian contingent.

What grabbed the eyeballs was the menu. It carried flavours of Rajasthan, Gujarat and more on a plate with dishes like ‘Pyaaz ki kachori’, ‘Laal Maas’ and ‘Gatte ki Sabzi’, ‘Kadhi’ and ‘Khichdi’ representing Gujarat. There was kalakand for desserts. It was great to see India on the plate which also became a much relatable affair for the guests.
