Sunanda Sharma had a very simple plan when Kamiya Jani came over for Sunday Brunch; make something nice, make it quickly, and, ideally, do not spend half the day in the kitchen. The result? A bowl of dahi tadka that looked like she had been making it forever. The funny part is, she had not.

Sunanda Sharma Made Dahi Tadka For Kamiya Jani

Sunanda Sharma admitted that this was actually her first time making dahi tadka. She had found the recipe on YouTube because she knew Kamiya Jani was coming and wanted to put together something quick. Yet, watching her cook, you would probably assume this was an old family recipe she had perfected over the years.

The process was wonderfully desi. She started with a generous spoonful of desi ghee because, as part of a full-fledged Punjabi meal, apparently regular cooking oil simply was not invited. Into the hot ghee went jeera, rai and curry patta, followed by onions.

Then came the masalas. There was haldi, namak and one mysterious masala that Sunanda Sharma herself could not name. She simply picked it up from her namakdani and added it. Yes, it followed measurements, no frantic Google search, just pure Indian kitchen logic: yeh bhi daal dete hain, achha lagega.

Trick She Uses To Prevent Dahi From Splitting

She let the mixture cook for two to three minutes until the onions had softened and the tadka had become properly masaledar. Then came the one step she was particularly particular about. She switched off the gas before adding the dahi.

According to Sunanda Sharma, this is what keeps the dahi from splitting. Basically, once the heat is off, the dahi can be mixed into the tadka without the whole thing turning into a curdled situation. And considering how quickly dahi can go from creamy to oops, kya ho gaya, it is a useful little trick to know.

She mixed the dahi into the spiced tadka and, just like that, the dish was ready.

And perhaps the best part was how confidently she explained every step despite having discovered the recipe that very morning. There was no pretending otherwise either. Sunanda Sharma openly told Kamiya Jani that she had gone to YouTube, found something that looked doable, and decided to make it.

Honestly, that might be the most relatable recipe tutorial ever. Sometimes you do not need a secret family recipe or professional cooking skills. You need dahi, a little ghee, whatever masala is sitting in the namakdani and enough confidence to act like you absolutely know what you are doing.
