Since the last year, Conrad Pune’s ongoing Chef Degustation Series has been on a mission to highlight the diverse cultures of India. The second edition will be having Chef Amninder Sandhu present bold flavours across the country in their Zeera restaurant. The dishes would involve ingredients that are sustainably sourced from various regions across India.

Sandhu has made a name for herself in the culinary world through her innovative and creative approach to cooking style. Her unique approach to Indian cuisine is inspired by her travels around. She draws on traditional techniques and ingredients but isn’t afraid to push the boundaries of what is considered ‘traditional’ in Indian cuisine. Her dishes are beautifully presented, with a focus on using local, seasonal ingredients to create bold, complex flavours.

What’s On The Menu?

Expect dishes like tandoori octopus, butter chicken bao and more, bringing a modern take on traditional Indian cuisine. The new menu draws inspiration from traditional cooking methods and recipes that have been passed down through generations. It focuses on ingredient-driven cuisine and clean kitchen practices. There are Naga Mushrooms, Goan breadfruit and Gutti Aloos from Assam, to name a few.  The ingredients picked from various regions reflect the very essence of artisanal cooking. Well, it’s quite an artistic amalgamation of several cultures and worlds.

From small plates like Kashmiri Morels, Lobster Uttapam Tacos, and Smoked Aubergine, to main dishes like Pearl Potatoes, Jackfruit Deomali, Malabar Fish Curry, and Raan Biryani, the menu offers a wide range of delightful dishes. There are a number of accompaniments crafted to complement the main dishes, such as Naan and Dahi Ki Khamiri Roti, as well as desserts like Mango Cornetts and Marigold Ice Cream Sandwiches.
