Delhi is about to get a restaurant experience that comes with its own set of rules. Raga By Gaggan Anand, the chef’s first restaurant in India, is opening at 21A, Janpath Road, Connaught Place, on August 26, bringing his progressive approach to Indian cuisine to the city. Inside Delhi’s Raga By Gaggan Anand: A Unique Experience

The restaurant has just 42 seats, offers a distinctive tasting experience, and is designed to feel more like an immersive chef-led experience than a conventional dinner. The restaurant’s name brings together Gaggan Anand and his long-time chef and business partner Rydo Anton. Beyond the initials, “Raga” also references the Indian classical musical form, where framework and improvisation come together. The menu itself is being kept largely under wraps, with the restaurant confirming a progressive Indian dining concept and two tasting menus.

The Raga By Gaggan signature experience costs ₹11,111 per person for food only. Beverages and wine pairings are charged separately, while a 3% booking fee is added at checkout. The booking must be paid in full in advance and is non-refundable. For two guests, the advance payment comes to ₹22,222 before the booking fee and any beverages.

The restaurant is open for dinner only, with the first service beginning at 5:30 PM and the last seating at 9 PM. Lunch is not yet being offered, and the restaurant remains closed on Tuesdays.

Rules For The Tasting Experience At Delhi’s Raga

The experience at the Raga comes with several rules that are unusual even for a high-end tasting-menu restaurant:

  • No phones or cameras: Phone and camera usage will not be permitted during most of the meal. This is intended to keep diners focused on the experience and prevent dishes and surprises from being photographed or shared prematurely.
  • 13+ only: Guests must be 13 years of age or older to attend the experience.
  • Seats are assigned: The restaurant pre-assigns all seats. Requests to change seats can only be accommodated if another suitable seat is available.
  • Arrive early: Diners are requested to arrive 15 minutes before their reservation. Tables will be held for 30 minutes after the confirmed booking time.
  • Dress code: Smart casual or smart elegant attire is required, while gentlemen are not permitted to wear open shoes.
  • Dietary restrictions: Allergies and dietary requirements must be communicated at least 48 hours in advance. Raga currently cannot accommodate vegan or Jain diets, coriander allergies or chilli allergies.
  • No corkage: Guests cannot bring their own alcohol under the restaurant’s corkage policy.
  • Chef’s presence isn’t guaranteed: While the restaurant carries Gaggan Anand’s name, his presence during a particular meal depends on his schedule and prior commitments.
  • No cancellations or refunds: Once the experience is booked and paid for, the amount is non-refundable, and cancellations are not permitted.

Raga offers two seating formats. The Chef Counter has five seats facing the kitchen, giving diners a front-row view of the culinary action. The Main Dining Room accepts individual bookings for up to six guests. Private dining is planned for later, with a minimum spend of ₹2 lakh.
