Alphonso, or Hapus, is often considered the epitome of mangoes in India. So, it’s no surprise that many people believe it’s the best variety for making aamras in summer. However, Chef Ranveer Brar has burst this bubble, revealing that while Alphonso can be part of the aamras-making process, it should make up only about 30% if you want the perfect bowl.
For a more flavourful aamras, he explains that if you’re using eight mangoes, six of them should not be Alphonso. Instead, he recommends varieties like Kesar and Chausa, which he believes are the real flavour drivers of this summer delicacy. According to him, Alphonso mainly adds sweetness and aroma but lacks depth in its flavour profile.
In the comments, he further noted that making aamras entirely with Alphonso is not ideal, adding that the variety is somewhat “overrated”. As he puts it, “Balance is the key to everything, even for a good aamras.”

Aamras Recipe To Try This Season
Ingredients
2 large size mangoes, cut into cube
⅓ cup Caster/ground sugar
Recipe
1. Take mangoes and caster sugar in a bowl.
2. With a hand blender, blend this mixture until smooth in texture. Alternatively, you can add the ingredients in the mixer and blend it together.
3. And that’s it, your aamras is done!
