Despite being a ubiquitous accompaniment to meals, papad continues to be an underrated Indian snack. From rice to chickpeas to tapioca to lentils, it comes in different varieties. While India for long has been munching on papadam, the West has slowly awoken to… legume chips! A food vlogger recently shared a recipe for legume chips and desis can’t help but say, “It’s papad”.

Alessandro Vitale AKA @spicymoustache is renowned for sharing low-cost, sustainable and low-waste recipes on Instagram. His plant-based dishes like Mushroom Shawarma, Homemade Caviar and Fig Tarts have plenty of fans. This time, Alessandro shared a recipe for Legume Chips.

To make the plant-based crisps, the vlogger added leftover rice, chopped herbs, peas, assorted spices and some water into a blender. He blended the ingredients to a thick coarse paste. He also made batches of mixtures with chickpeas and lentils. Then, he spread the paste between two pieces of parchment paper. Using a rolling pin, the paste is flattened to form a thin layer. The next step involved dehydrating or cooking the batter in an oven overnight.

Once the batter completely dried, he broke them into smaller pieces and fried them in hot oil to make crispy chips. His chips were made using natural ingredients which emanated bright yellow, pink and green colours. They looked healthy yet supremely snack-worthy. Alessandro cosies up on his sofa with a bowl of freshly made homemade Legume Chips and a great movie.

Indians Identify It As Papad Or Papadam

In no time, his reel garnered over 3 million views. Many expressed their desire to try the recipe. However, Indians couldn’t help commenting that at the end of the day, he just made papad! A person commented that in South India, the snack is called papadam and it is sundried. An Instagrammer remembered her grandmother making it for her in India and sharing it with her children and grandchildren during the summer. Indian commentators told him they called it “papad” or “papadam”.

Even people from Indonesia could identify with Alessandro’s Legume Chips. An Instagrammer said that in Indonesia the dish is called Kerupuk or Puli Or Gendar, which is essentially crackers made of leftover rice.
