Take one look at the Chef’s Instagram account and you’d be taken aback by the vibrant variety of Indian food videos you’d see from the heart of the nation. This time, Chef Gary Mehigan shared a video of a Madurai street vendor making bun parotta. He calls it “dream skills”.

Chef Gary Mehigan shared a video of a street vendor from Madurai kneading the dough to make bun parotta. And what you’d see is amazing, to say the least. The reel shared on Gary’s Instagram account @garymehigan will have you gasping in wonder. Here, Gary first tells us to “watch the expert”. And then you’ll see a street vendor wearing an apron, kneading the dough to make bun parotta.

Without even blinking once, he smiles at the camera as his hands gently roll and pull the dough apart to make a light, almost transparent, handkerchief-like texture of the dough ball. Gary Mehigan even calls it a 30-second bun parotta. Once he is done, the street vendor gives a wide small and keeps the dough ball aside. Gary Mehigan smiles widely and says “Yaaaas”.

He supplements the reel with a caption, where he just can’t stop admiring the street food vendors from Madurai, Tamil Nadu. The Australian Chef calls these “dream skills”. While he posted this before, every time he watches this video, he is just amazed. He goes on to add that one must tear the bun parotta which is super light and crisp. And then dip this bread into spicy gravies and devour it. Gary Mehigan even calls this delicious and said he wants one right away!
