Gary Mehigan Salivates Over Sweet Idiyappam
Gary Mehigan shared a delicious video of the making of Tamil Nadu’s famous idiyappam on Instagram. In the Instagram video, you can see a street food vendor in Madurai, pressing the idiyappam maker, filled with rice flour batter, to release the noodles. It’s then steamed and served hot. A woman sitting next to him, pours coconut milk and coconut shavings on the idiyappam and serves it to customers.

The Australian Chef supplements the video with an interesting anecdote. He reveals that he was thinking about this street food in the morning. He goes on to educate foodies that idiyappam is a dish where rice flour paste is pressed into a fine noodle. This is then steamed. He goes on to add that he enjoyed this dish in a street food stall in Tamil Nadu’s Madurai.

Gary Mehigan loves the sweet version of the dish where warm idiyappam is drenched in coconut milk and then garnished with fresh coconut and jaggery. The MasterChef Australia veteran describes the dish as soft, creamy, and sweet with a little bite from the coconut. His verdict? It’s amazing!
