The St. Regis Mumbai is set to host Maido, the restaurant currently ranked No. 1 on the World’s 50 Best Restaurants list, for its first-ever appearance in India. Presented through the Masters of Marriott Bonvoy and Culinary Culture, in association with American Express, the two-night culinary pop-up will take place on September 25 and 26, 2026. St. Regis Mumbai To Host Maido For 2-Day Pop-Up This September

Led by chef-founder Mitsuharu “Micha” Tsumura, Maido will travel from Lima to Mumbai for two exclusive dinners at Koishii, The St. Regis Mumbai’s Japanese-Peruvian restaurant. Guests will get the opportunity to experience Maido’s signature Nikkei cuisine, which combines Chef Micha’s Japanese heritage with Peru’s diverse ingredients, flavours and culinary traditions.

Born in Lima, Chef Micha opened Maido in 2009 at the age of 28. The restaurant has since been named No.1 on Latin America’s 50 Best Restaurants list four times. In 2025, it was also named The World’s Best Restaurant by The World’s 50 Best Restaurants. Maido takes its name from the Japanese greeting “Maido!”, the first word guests hear when they enter the restaurant. Over the past 15 years, it has become known for showcasing Peru through a Nikkei lens, bringing together Japanese techniques and precision with the country’s rich culinary heritage and ingredients.

Mumbai Diners Can Expect Maido’s Signature Dishes

Talking about the upcoming pop-up, Chef Mitsuharu “Micha” Tsumura said he is looking forward to bringing the Maido experience to India for the first time. He said that he and his team will travel from Lima to Mumbai soon and are keen to learn about India’s culture and cuisine while introducing diners to the food and culinary approach of Maido.

The Mumbai dinners will feature a tasting menu of Maido’s signature dishes, prepared by Chef Micha and his team at Koishii. The collaboration will bring together Japanese and Peruvian culinary traditions, giving Mumbai diners an opportunity to experience Maido’s celebrated Nikkei cuisine without travelling to Lima.

Khushnooma Kapadia, Vice President, Marketing, South Asia at Marriott International, said the collaboration reflects Masters of Marriott Bonvoy’s focus on bringing renowned global culinary talent to India. She added that bringing Maido and Chef Micha to the country for the first time marks another step in that effort.

The collaboration also builds on Koishii’s Japanese-Peruvian culinary identity at The St. Regis Mumbai. General Manager Nishanth Vishwanath said the restaurant’s focus on Nikkei cuisine makes it a natural setting for Chef Micha and the Maido team to showcase their culinary style in India.

The collaboration continues Culinary Culture’s partnership with Masters of Marriott Bonvoy, which has previously brought restaurants such as Mirazur from France, Osteria Francescana from Italy and Central from Peru to India. Both dinners are now fully booked, with the event attracting diners from Mumbai and beyond.
