For this segment, our Editor-in-Chief, Kamiya Jani, travelled all the way to Amritsar to meet one of India’s most loved chefs, Michelin-starred chef Vikas Khanna! Yes, that’s correct! Vikas Khanna Talks About ‘Boo Wale Kulche’

As soon as Kamiya Jani and Vikas Khanna, along with his family, sat down for the brunch, it instantly felt homely with all the amazing Punjabi spread that was there on the table. While eating mathri and chole together, Kamiya saw Vikas eating Kulche, which made her instantly ask, ‘What are you eating?’ To which Vikas explained that it is called ‘Boo Wale Kulche’. Well, just like us, Kamiya was also surprised by the name and further asked Vikas to elaborate. To which he stated, “If you ask people in Amritsar, we refer to these as boo kulchas. Not boo kulchas, but bad booh kulchas.” Kamiya further asked, ‘Do people eat that? To which he said, “Yes, it is double-fermented.”

He further stated that it is the life of the people of Amritsar. People love to eat it with chicken, pakoras, chai, and chana. Vikas Khanna also shared how whenever a chef comes to visit the city, this is the first thing the chef eats whenever he comes to Amritsar.

All About The Delicious Punjabi Feast At Vikas Khann’s Home

The brunch at Vikas Khanna’s home was not only delicious but also very homely. On the Sunday Brunch menu, they had everything from delicious Chana Masala, Kadhi Wale Chawal, Rajma, Gulab Jamun, and Bhalle. Additionally, the pure Punjabi meal also had a fun matti touch to it, imli chutney, chole, and onion.
