The dish came into existence due to the demand of the textile mill workers of Mumbai back then. These workers did not have enough time during their lunch breaks to sit and eat an entire meal, according to a report by Pav Bhaji Hut. In fact, they wanted to eat light food only as they had to work very hard physically and a heavy meal could not help them with the activities. Also, they wanted to eat something healthy, pocket-friendly, and easy to cook. Listening to all these, a street vendor in Mumbai then cooked a recipe with leftover vegetables. Also, he served pav instead of rice. Soon, textile mill workers began enjoying it during the lunch breaks.

Slowly, its popularity saw a surge and everyone started enjoying pav bhaji. This is when restaurants in Mumbai also began serving the classic dish to customers. From being the meal of textile mill workers, today it is such a renowned food found in the entire India and many foreign countries as well.
