If you’re flying Singapore Airlines (SIA), then a gourmet Indian feast of the richest curries, fragrant rice, and hot tandoor-cooked rotis awaits you. After all, the man behind your lavish in-flight meal is none other than India’s most beloved chef, Sanjeev Kapoor. Singapore Airlines has recently revamped its thalis for its Suites, First Class and Business Class flyers. Khaane mein kya hai? Read on to find out!

Chef Sanjeev Kapoor Gives A Flavoursome Spin To Singapore Airlines’s Thalis

Singapore Airlines’s newly revamped Shahi Thali is a robust Indian feast featuring delicately prepared traditional delicacies for Suites and First Class passengers. The meal is developed by the airline in partnership with Chef Sanjeev Kapoor, the Airline’s International Culinary Panel (ICP). From May 1, 2025 onwards. The updated Shahi Thali will be available for passengers, promising an elevated dining experience in the air.

In the Shahi Thali, diners will find a platter of six vegetarian or meat-based dishes, paratha and rice. Hot and cold appetisers and desserts will complement the main course, while a refreshing glass of lassi will help wash down the rich meal. To elevate the dining experience and turn it into a palatial one, the Shahi Thali will be served on a hammered-finish copper-coloured steel Thali platter. With it comes similarly designed cutlery.

For Business Class customers, Chef Sanjeev Kapoor’s revamped Ruchi Thali experience has not four but now has six elements. The thali comes with four vegetarian or meat-based dishes and accompaniments like rice and paratha. It includes an appetiser, kachumber salad, mithai (Indian dessert)and lassi. Ruchi Thali will be presented in a silver hammered-finish plate.

A Gastronomic Journey Of Robust Indian Flavours & Well-Balanced Meals

Chef Sanjeev Kapoor, who put India on the culinary map and almost taught the nation to innovate with traditional recipes, has brought a refreshed approach to Singapore Airlines’s thalis. Shahi Thali and Ruchi Thali feature traditional Indian delicacies prepared using heritage cooking techniques like tandoors and iron griddles. A few dishes will be simmered in clay pots to bring out the rustic aroma of the dishes, 30,000 feet in the sky.

Designing the new menus involved taking into consideration the need to offer well-balanced meals. Both Shahi Thali and Ruchi Thali have protein, starch, veggies and gut-friendly ingredients like ginger and turmeric to help with digestion. The dishes take you on a gastronomic journey across India. Chef Sanjeev Kapoor has brought his expertise in Indian cooking and brought in certain levels of science and creativity to curate these lavish Indian in-flight meals. So, this meal on Singapore Airlines is truly a khazana!
