Sarah Todd’s love for everything desi isn’t new. This time the celebrity chef is on a hunt for the best chai in India. In our tea-loving nation, she travelled all the way to the Himalayas, to find a cup of freshly brewed chai that spoke to her soul. And if you haven’t guessed it already, then read on!
Sarah Todd Falls In Love With Kahwa In Kashmir
Taking to her Instagram handle, Sara Todd recently came across Kahwa or Kashmiri tea. The fragrant golden-hued brew is a gift from Kashmir. “That is up there with some of the best teas,” she says in her reel as she sips the kahwa. She is delighted with the aroma of saffron and the almond slivers in her chai that she can nibble on.
Dining at Chai Jai in Kashmir, Sarah is seated at a quaint spot in the cafe beside a gorgeous Victorian window. The sunlight streams through the window, almost matching the golden hue of the kahwa in her hand. The brew is a rich concoction of saffron, cardamom, cloves and cinnamon. It’s sweetened with honey. Unlike other chai which is strained, kahwa has crushed almonds and almond slivers garnished. So, you can bite the almonds as you sip your tea.
To elevate the recipe, a dollop of gulkand is added to a cup, before pouring the tea from a saucer. It adds a subtle floral sweetness, giving it a shahi or royal taste. A gesture of Kashmiri hospitality, the chai is served at the homes of Kashmiris and during special occasions.
In no time Sarah Todd’s reel went viral on social media with Netizens encouraging her to try Noon Chai as well. A commenter asked her to have the Kashmiri pink tea with kulcha. Another person listed the benefits of Kahwa. The person stated it boosts immunity, improves metabolism, reduces stress and aids digestion.
Well, have you tried Kahwa? Moreover, are you excited to try Sarah Todd’s favourite chai in India?
