Two bits of good news for one Al Barsha pizzeria this month, and honestly, they’re the kind that go rather well together. Chef Roberta De Sario, head chef and co-founder of FALCONE in Galleria Mall, has climbed to No. 63 in The Best Pizza Awards’ World’s Best Pizza Chefs ranking, and to celebrate, the restaurant has announced a new pizza.

That’s not a small jump. The rankings confirm the position, up from No. 85 the year before. De Sario is Naples-born and trained under some genuinely heavyweight names, including a stint at the historic Pizzeria Da Michele Condurro and time spent alongside Franco Pepe, before bringing that pedigree to Dubai when FALCONE opened in Al Barsha under Hong Kong hospitality group Black Sheep.

What’s The Buzz Of The New Pizza?

To mark the occasion & to give people a reason to actually come in and celebrate with her, FALCONE has launched the Pepperoncini Verdi (AED 90). It’s built around creamy fior di latte, smoked scamorza, roasted green chilli, sweet datterino tomatoes and fresh basil, wood-fired in the restaurant’s signature Pavesi oven. The green chilli in it is not fiery in the chase-it-with-water sense but more of a slow, rounded warmth that plays off the smokiness of the scamorza rather than fighting it.

Why It Fits Falcone’s Whole Scene

FALCONE built its name on doing very little to very good ingredients. Expect the kind of Neapolitan pizza-making where restraint is the actual skill. The Pepperoncini Verdi doesn’t deviate from that. No unnecessary components, no gimmick toppings, just a considered combination that leans into what a Neapolitan base does best: char, chew and a base that can hold its own against bold flavours without getting soggy under them.

It’s a solid follow-up to FALCONE’s earlier signature, Roberta’s Pizza, which paid tribute to the Italian flag with basil pesto, tomato compote and fior di latte. If you’re building out your own Al Barsha pizza crawl, FALCONE now sits comfortably alongside the rest of the city’s best pizza spots worth making a detour for.
