In my kitty of favourite biscuits— Bourbon, Jim Jam, Maska Chaska and Nice — Jim Jam holds a special place. There’s something so comforting, alluring and of course nostalgic about Jim Jam. The vanilla cream, punchy strawberry jam and buttery-sugary cookie go beautifully together. What if you could take a trip down nostalgia with your favourite Jim Jam biscuits and zhuzh it up to make a cheesecake? MasterChef India’s Natasha Gandhi has curated a decadent Jim Jam Cheesecake and you need to check it out!

Natasha Gandhi Shares A Jim Jam Cheesecake Recipe

Chef and food content creator Natasha Gandhi and her husband and food photographer Vinayak G curated a Jim Jam biscuit-inspired cheesecake. With three primary components— a biscuit base, jelly and vanilla cheesecake—  this recipe is a treat for the senses. Natasha Gandhi’s no-bake Jim Jam Cheesecake is super easy to make, delicious and ‘Gram-worthy!

Here’s how you can make delicious Jim Jam Cheesecake at home.

Ingredients

For the Base:
• 50 Jim Jam biscuits (separate the top and bottom layers)
• 130g of unsalted butter, melted

For the Cream Cheese Mixture:
• 375g of whipping cream
• 600g of Philadelphia cream cheese
• 100g of caster sugar
• 2 tbsp of cream from Jim Jam biscuits
• 1/2 tsp of vanilla bean paste
• 1 tsp of lemon zest

For the Jelly:
• 1L water
• 2 packs of jelly premix crystals

Method To Make This 

First, prepare the base by crushing Jim Jam biscuits with a pestle. Once the biscuits are crushed to a coarse consistency, add the melted butter and mix well. Then, press the mixture into a cheesecake mould lined with butter paper to form an event base. Then, set this biscuit base aside.

Next, proceed to prepare the cream cheese mixture for your cheesecake. Take a bowl and whip the whipping cream to form stiff peaks. Then, take a separate bowl and combine the caster sugar, cream sugar as well as the cream from the Jim Jam biscuits. Keep whipping the mixture to form a smooth and fluffy mixture. Lastly, add the vanilla bean paste and lemon zest to elevate the flavours of the cheesecake.

Then, focus on preparing the third component of the cake, the jelly. For this, take a saucepan and bring one litre of water to a boil. Add the jelly premix crystals and mix well. Let it boil for a bit. Finally, assemble the cheesecake. For this, pour the cream cheese mixture on the prepared biscuit base and allow it to set for 15 minutes.

Once the cheesecake and biscuit base is set then pout the jelly mixture over the cream cheese layer until you get a 1/2 thick layer. Let this jelly set properly. Once the jelly is set, pipe the remaining cream cheese mixture on top. Use a spatula to smooth it out. Lastly, garnish the top layer with Jim Jam biscuits. Serve it cold and your Jim Jam Cheesecake is ready!
