Hello HungryFolks!! When someone says Rajasthan what comes into your mind, is sand dunes, hot weather, royalty, deserts, kadhi kachori, etc. Yes, Kachori is one of the most famous things in Rajasthan. Kachori is a deep-fried spicy snack that is filled with various fillings, mainly moong-dal. Today let me introduce you to Kachori’s big brother the world-famous biggest Nasirabad ka Kachora. Nasirabad is a small town near Ajmer in Rajasthan and is known for its Kachora’s.

There’s a small outlet named Chawannilal Halwai in Nasirabad which is approx. 49 years old. This shop was set up in 1933 by Chhawanilal Ji Gujar. The USP of this food joint is still the same it’s 600gms huge Kachora. This place also serves hot Jalebis which are extremely sweet and crispy in taste.

Making

This place offers two types of Kachora’s, one with urad-dal’s filling and one with potato filling. They make a large size dough of refined wheat flour (Maida) with the filling inside it and then they roll out the bread, in order to shape it like a broad roti. The next step is to do holes in that piece of bread so that it doesn’t take the shape of a puffed puri.

After this, they first semi-fry it from both sides, and for deep-fry, they put it in another huge Kadhai. When the color of the Kachora changes to Golden-brown it is ready for packaging.
