Celebrated in April, Thingyan marks the Burmese New Year, a vibrant festival synonymous with water-throwing and jubilant celebrations. Food plays a central role in these festivities, and Thingyan rice, a fragrant dish infused with water, takes centre stage on dinner tables.

Origins And Significance

Originating with the Mon people of Lower Burma, Thingyan rice has transcended ethnic boundaries to become a beloved countrywide tradition. The dish’s name itself reflects its connection to the festival – “Thingyan” refers to the New Year period in Burmese.

Unlike most rice dishes, Thingyan rice isn’t cooked conventionally. Instead, fragrant jasmine rice is soaked in water flavoured with turmeric, sometimes infused with the delicate aroma of a small candle. This unique method imbues the rice with a subtle floral earthiness and a beautiful, translucent quality.

The accompaniments to Thingyan rice are as important as the rice itself. A salad featuring cured fish, typically a local variety called ngapi, is a common pairing. The ngapi is blanched and then stir-fried with thinly sliced onions, adding a salty and savoury element to the dish.

For a tangy counterpoint, sour fruits like green mango or pickled Marian plum are included. Roasted chilli peppers provide a fiery kick, completing the flavour profile.
