The Ambani Wedding was a spectacle in all aspects so needless to say, the food at this event could not have been anything less than totally remarkable. The menu served at the event was all vegetarian and was curated by Chef Virgilio Martinez, widely touted as the best chef in the world, and Chef Avinash Martins, known for his iteration of Goan cuisine. Chef Virgilio Martinez, The Mastermind Behind Central, Peru

Chef Virgilio Martinez is the owner and head chef of Central in Peru which is his flagship restaurant. Central is currently known as the best restaurant in the world and uses unique and local ingredients in its menu.
Martinez utilises modern cooking techniques on Indigenous Peruvian ingredients creating dishes that are nothing short of gastronomic artworks. He also focuses on seemingly mundane ingredients and uses them to transform his dishes.
For instance, Lima, another restaurant of his in London, uses more than 120 varieties of salt. Other unique ingredients he has worked with include piranhas, potatoes that are grown at 5,000 metres above sea level and an edible cyanobacteria called Kushuru.

Chef Avinash Martins is a homegrown culinary master. He shares with Chef Martinez his philosophy of innovating with local and traditional ingredients and his commitment to shedding light on and transforming the cuisines of their respective homelands.
His flagship restaurant in Goa, Cavatina, is making waves through its transformed interpretation of Goan cuisine that underlines its Portuguese influence. He was trained by the Oberoi Group and worked there for many years.
Now, he aims to expand the way people look at Goan cuisine. His efforts are a continuous reminder of why the Goan culture and cuisine are such an important fabric in the diverse tapestry of Indian heritage. We hope the two chefs get to work together in the future as well!
