CT Review: I Tried Delhi’s First Omakase Coffee Experience At Libertario & It Was Unlike Anything!

M Block market in GK 2 has many places for coffeeholics, looking to savour an aromatic brew. But Libertario Coffee Co. & Roasters stands out from the many options available. Not just with its beautiful blue tiled facade, but also the multitude of quirky concoctions that visitors are bound to find here. Blending Omakase experience with coffee, I got to experience this, and I am here to spill the beans about how it went.

Libertario Has A Dedicated Pour-Over Omakase Bar

I decided to check out Libertario with my sister-in-law, Paavni (a fellow coffee aficionado), for some bonding sesh. And what better way to gossip and share some incredible memories than some good coffee? However, what Libetario had in store for us truly left us shook. After all, when you hear omakase experience, you hardly associate it with coffee, but this cafe brings the best of worlds together, and how!

The Omakase experience began with Chef Vikas Maithani and Barista Nitin Kumar, telling us about the amazing ride we were in for. To sum it up, they have five incredible coffee profiles. Each of this is a signature and unique in its own way. And as you might have guessed, your girl got to try ‘em all!

Chef Vikas then suggested food pairing that complemented (or contrasted) the drinks, which we ordered (du-uh!).

Trying Five Flavour Profiles & Food Pairings

Now coming to the drinks and food itself, there were five flavour profiles that were presented to us – Paz, Libre, Voyage, Rebel, and Impact. Each of them is unique and pairs well with the different options of nibbles available.

PAZ

Starting with Paz, the pour over was smooth and had an almost smoky-ish flavour. With notes of sugarcane and milk chocolate, the bitterness that you might expect never really comes. Made with medium roast Colombian and Indian beans, it makes the coffee effortlessly enjoyable. But what takes the experience to the next level is its pairing with Mushroom Empanadas. The creaminess from the cheesy mushroom empanadas, with just the right kick from the salsa verde, makes for the perfect contrast to the drink.

Libre

For Libre, which is another blend, we first cleared our palates with sparkling water. Taking a sip of the drink, the strong taste of coffee instantly flooded our mouths, with a fruity aftertaste. The chef told us that the fruity notes were attributed to the fact that it had cherry and dark chocolate notes. On the chef’s recommendation, we paired it with Fresh Fruit Granola. With perfectly whipped yoghurt, the sweetness of the fruits and crunchiness of the granola make for a great complementary dish.

Voyage

When we cleared our palates and tried Voyage, made with the Geisha variety. And now, they’re growing it in India as well. The beverage itself was quite subtle compared to others, and almost had a floral note to it. And it was contrastingly paired with Chocolate Chip Cookies, which were delicious and soft, but a little too sweet for me. However, if you love your cookies a little extra sweet, it’s the perfect choice for you.

Rebel

After this, we got to sip on Rebel, which although made with Geisha beans, had undergone carbonic maceration. Sipping on this, you will truly feel that little tingle on your tongue, which is then swept away by the creamy Smash Avocado Toast. Although the pairing was perfect, I did feel the toast was a little dry for my taste.

Impact

Finally, we rounded off the experience with Impact. This is a single-origin coffee, and has the sourness from blueberries, making for an impactful flavour note. We paired it with Charred Beet & Orange. The beetroot was soft and creamy feta together with the sweetness of the jam and freshness of the roquette leaves, made for the perfect contrasting pairing.

Interview With Miguel Villaquirán

In fact, I even got to interview Miguel Villaquirán, Founder and CEO, Libertario Coffee Co. & Roasters. And he gave us an insight into his coffee preferences, Libetario’s history and what’s on the cards for the brand.

1. What inspired you to open Libertario in Delhi’s bustling GK2 M Block Market?

Delhi, and specifically GK2 M Block Market, offered exactly the kind of environment we were looking for: dense, high-frequency, and deeply rooted in the community.

From the beginning, Libertario has been designed as a neighbourhood-driven brand with global standards. GK2 allowed us to enter India through a market where customers are discerning, well-travelled, and open to new experiences, while still valuing familiarity and routine.

2. What sets Libertario apart from other coffee shops in the market?

Libertario is a Colombian speciality coffee company built on deep expertise in coffee, with the ability to execute a consistent, high-quality coffee programme across multiple countries. Today, we operate across five markets globally.

We place strong emphasis on origin and product quality, but what truly differentiates us is how we bring that into a consumer-facing format. The focus is not just on serving great coffee, but on how people experience it. That balance between product depth and everyday accessibility is what defines the brand.

3. How does Libertario bring together the Omakase experience and coffee? Why did you think of bringing this experience to Delhi?

The Omakase format is traditionally built around trust, placing the experience in the hands of the craftsperson, and that philosophy translates very naturally to coffee.

At Libertario, we’ve adapted this into a guided coffee experience, where the guest is taken through our programme in a structured, yet conversational way.

Delhi felt like the right market for this because the consumer here is increasingly experience-driven. There is a growing curiosity around where products come from and how they’re made, and this format allows us to meet that curiosity in a way that feels personal, not instructional.

4. What can visitors expect from this novel coffee experience (Omakase)?

The experience is designed as a guided tasting, led by our barista team, where guests are taken through a structured exploration of our coffee programme.

What makes it distinct is the level of engagement. The experience is conversational and paced, giving guests the space to ask questions, explore preferences, and build a deeper understanding of coffee in a way that feels natural.

5. You have a family background in coffee farming. How has that influenced the opening of this café?

It has shaped the foundation of how we think about coffee and how we build the brand. The family’s journey began in coffee production, which over time expanded into a broader understanding of the industry, from quality and sourcing to how coffee is experienced by consumers.

Libertario was created to bring that depth into a café format, combining strong coffee credentials with a hospitality-led approach that makes the experience more engaging and accessible.

India is a very intentional extension of that vision. When I moved here, I saw a market that was evolving quickly, with consumers who were increasingly global in their tastes but still underserved in terms of high-quality, experience-led café environments. After spending
several years to understand the market, we felt there was a clear opportunity to build something long-term here.

6. How has staying in India over the past few years influenced your coffee tastes?

At my core, I’ve always preferred a medium-light black coffee, something clean, structured, with notes like red fruit and dark chocolate.

Spending time in India hasn’t changed that preference, but it has sharpened my understanding of how people here engage with coffee. As a business, that’s been far more valuable.

7. Do you have plans for expansion in Delhi or anywhere else in India?

Absolutely! What we’ve built so far is just the starting point. India is a core growth market for us, and we’re actively building a pipeline to scale the brand across high-potential urban centres. The focus is on expanding with intent, taking a model we know works and rolling it out in a way that compounds both brand and economics over time.

Final Verdict

Offering some of the most unique blends, the experience is something I definitely recommend, especially for its novelty. And offering a limited albeit offbeat flavours, this little nook in the bustling market should be on every coffee-lover’s list!
