It’s not every day that a dessert on MasterChef Australia manages to surprise both the judges and viewers with a combination of flavours no one saw coming! That’s exactly what happened when contestant Depinder walked up to the tasting table with what she described as a Masala Chai Ice Cream Sandwich.
Masala Chai Ice Cream Sandwich: An Iconic Dessert

Now, let’s think for a second: masala chai, that warm, deeply spiced comfort drink that most Indians can’t go a day without, turned into an ice cream, and then wrapped up into a sandwich? It sounds absurd on paper, but when this Masala Chai Ice Cream Sandwich was put on the plate, it was nothing short of extraordinary.
Depinder’s dish was anchored by a masala chai ice cream that was anything but ordinary. It carried the assertive fragrance of saffron, cardamom and cinnamon, but instead of overwhelming the senses, it coaxed them into leaning closer. The ice cream sat confidently between two crisp biscuits: one kissed with cardamom and the other bright with orange zest. They framed the ice cream in a way that added texture, structure, and a surprising pop of citrus that no one saw coming!
And just when it seemed the dish couldn’t get more inventive, she added saffron, first as a light cream piped on top, and then as a gooey orange-saffron gel, used as a creative garnish.
Masterchef Judges Dig It Too!
The reaction from the judges to this Masala Chai Ice Cream Sandwich? Instant admiration. One of them, visibly delighted, referred to the saffron, chai and cream as “mates” or a trio that clearly understood each other. And in the world of MasterChef, where ideas are easy but execution is everything, this matters. Another judge went a step further and called it one of the most successful ice cream sandwiches ever made on the show.

There’s a fine line between clever and gimmicky, and let’s just say, Depinder stayed on the right side of that line. That’s what made the masala chai ice cream sandwich a moment, not just in the episode, but possibly in the show’s dessert history.
