Traditional messes often left a sour taste in the mouths of students, serving up subpar, uninspired fare. Vegetarian students, in particular, found themselves grappling with concerns about the quality and origin of the food served. Against this backdrop of culinary discontent, Saurabh and his comrades embarked on a mission to revolutionise dining at IIT Varanasi.

Their goal was ambitious yet noble: to establish a Sattvik mess that not only provided students with sustenance but also nourished their bodies and souls. With a price per plate set at ₹50, what awaited within those walls was nothing short of a culinary revelation.

Pure, unadulterated flavours were preferred over onions and garlic in every dish prepared at Sattvik Mess, which was created with great care and attention to detail. The use of slow cooking methods ensured that the components remained whole and gave every bite an extraordinary flavour. Not only was the food nourishing, but it also embodied the essence of Sattvik dining—a harmonious blend of flavours.

Despite Saurabh’s graduation from IIT, the legacy of the Sattvik Mess lives on, a testament to its enduring popularity and success. The management has upheld Saurabh’s vision, ensuring that current students continue to enjoy the same exceptional quality and taste that made the mess a beloved institution.
