If you are ready to take your soup game up a notch, start by assembling all the required ingredients for beer soup listed below:

  • Four tablespoons of unsalted butter
  • 400 grams of chopped potatoes
  • One chopped leek (white parts only)
  • One medium chopped onion
  • Two chopped cloves of garlic
  • 500ml of light beer
  • 300 ml of water
  • One bay leaf and a sprig of rosemary
  • Half a teaspoon of salt
  • One-fourth teaspoon of ground black pepper

Now, follow these steps for a delicious bowl of comfort:

  1. Take a pan and put it on the stove. Add some butter to it and let it melt.
  2. Once the butter starts to bubble up, add chopped potatoes and onions to it.
  3. Let it soften on low heat for at least 5 minutes.
  4. Once the onions start to caramelise, add the chopped garlic and sauté it well.
  5. Once the veggies are cooked, pour the beer and water into the pan.
  6. Season it well with herbs, pepper, and salt.
  7. Cover it with a lid and cook it on low heat for at least 30 minutes.
  8. Once the flavours have mixed together well, remove the herbs and blend the mixture for a soup-like consistency.
  9. Adjust the seasoning as per your liking and enjoy it hot.

Pro tip: To make it more creamy and delicious, you can add some cheddar cheese while cooking.
