However, not only in Gujarat but this snack is also extremely popular in Maharashtra and a few other neighbouring states. People eagerly look forward to this seasonal treat because it is available only for a short period, usually between November and February. The limited availability makes ponk even more special.
Why is this snack seasonal? Since it depends entirely on the sorghum harvest, it cannot be produced year-round. Farmers make ponk by harvesting sorghum while it is still young and green. They lightly roast the grains, which gives ponk its smoky flavour and soft, chewy texture. Unlike dried grains that can be used at any time, ponk is the favourite winter special that people enjoy eating.
