Here’s how you can make this delicious kheer at home:

Ingredients:

  • 1 cup of Chak-Hao rice (black rice)
  • 4 cups of milk
  • 1/2 cup of sugar
  • 1/4 teaspoon of cardamom powder
  • A pinch of saffron strands
  • Chopped nuts for garnish

  1. Rinse the Chak-Hao rice thoroughly under running water, soak it in water for about 30 minutes, and then finally drain it.
  2. In a heavy-bottomed pan, add the soaked rice and 2 cups of water. Bring it to a boil over medium heat.
  3. Once the water starts boiling, reduce the heat to low and cover the pan. Allow the rice to cook until it becomes soft and tender.
  4. In a separate saucepan, heat the milk over medium heat until it comes to a simmer. Stir occasionally to prevent it from sticking to the bottom.
  5. Once the rice is cooked, add it to the simmering milk and stir well. Allow the mixture to cook on low heat.
  6. Add sugar to the mixture and continue to stir until the kheer thickens to a creamy consistency.
  7. Add cardamom powder and saffron strands to the kheer, giving it a delightful aroma and flavour.

  9. Once cooled, transfer the Chak-Hao Kheer to serving bowls and garnish with chopped nuts of your choice.
