Talking to Eataly München’s social media handle, the chef at Munich’s most authentic Italian spot explained how to tell the difference between low-quality pasta and high-quality pasta. In a video, he showed two types of pasta — one white and one bright yellow. He revealed that yellow pasta usually undergoes a quick drying process, which is not ideal, while slow-dried retains better flavour.

Good pasta should be dried slowly to keep its natural flour colour, making it easier to digest and more nutritious. The chef also mentioned that white pasta absorbs sauce much better than yellow, enhancing the overall taste. So, next time when you’re buying pasta, make sure you know this difference to choose the right quality for your home or restaurant.

3. Quality pasta stays firm and holds its shape when boiled. It should not turn soft, mushy, or break easily.

4. The best pasta is made using only durum wheat, semolina, and water. Avoid options with added chemicals or unnecessary extras.

5. Premium pasta is often slowly dried at low temperatures. This helps retain its natural flavour and nutrients.
