According to a report by NDTV, a US-based startup, MycoTechnology recently discovered a sweet protein found in truffle mushrooms. This natural sweetener can perhaps be a healthier alternative to sugar and aspartame. Often used as a luxury ingredient, truffle mushrooms are very popular in European cooking.

MycoTechnology deep dives into the world of mushroom research. With a sweet protein found in truffles, it can add natural sweetness to dishes without the problem of added calories. It’s typically found in a truffle variety called ‘honey truffles’. This unique variety of truffles is mostly cultivated in Hungary.

It Doesn’t Have Added Calories & After Taste

A possible guilt-free replacement for sugar, truffles have a lot of potential in the food industry, especially among people with a sweet tooth. Also, unlike aspartame and other traditional sweeteners, it doesn’t have an after-taste. In flavour, it has an intense sweetness. So, people with a sweet tooth can resort to the sweet protein found in truffles for guilt-free sweetness.

MycoTechnology’s CEO, Alan Hahn revealed in a statement that their honey truffle sweetener is derived from a protein and is widely recognised to be good sweeteners. He further adds that this breakthrough brings in a new era of clean-label sweeteners. He further adds that the sweet protein in honey truffle sweetener revolutionises the food industry without relying on artificial sweeteners or even sugar for that matter.
