Here’s an elaborate recipe to make delicious Kashmiri Telvor:

Ingredients:

  • 3 cups of all-purpose flour
  • 1 cup of warm water
  • 2 teaspoons of active dry yeast
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1/4 cup of white sesame seeds
  • 1 tablespoon of vegetable oil or ghee
  • Water for boiling

Follow these steps to make it:

  1. In a small bowl, mix some yeast and sugar in warm water and stir gently to activate the yeast.
  2. In a large mixing bowl, combine the flour and salt and add the activated yeast mixture to it.
  3. Gradually add more warm water as needed and knead the dough until it becomes smooth and elastic. Knead again after adding some oil or ghee.
  4. Cover the bowl with a damp cloth or plastic wrap and let the dough rise for about 1-2 hours, or until it doubles in size.
  5. Preheat your oven to 200°C.
  6. Punch down the risen dough to release the air and divide it into small, equal-sized balls.
  7. Take each ball and gently flatten it to create a bagel-like shape.
  8. Dip each Telvor in water and then coat it generously with white sesame seeds, pressing the seeds gently onto the surface.
  9. Next, place the Telvor in boiling water, one or two at a time, and let them boil for about 1-2 minutes on each side. 
  10. Remove the Telvor from the boiling water and place them on a baking sheet lined with parchment paper.
  11. Bake the Telvor in the preheated oven for about 15-20 minutes, or until they turn golden brown and have a crispy crust.
  12. Serve the Kashmiri Telvor warm with your favourite accompaniments, such as Kashmiri tea (Kahwa), chutneys, or curries.
