With Christmas right around the corner, you’d probably be searching for unique cake recipes. Give the annual plum cake a miss and instead whip up some traditional Goan cakes instead. Chef Saransh Goila has a recipe for Bathika Cake and it will make your Christmas a delishaas one. The best? It has a boozy twist! So, check it out!

Saransh Goila shared an easy peasy recipe for Goan Baath AKA Bathika Cake. This traditional cake from Goa is made with rava or sooji and has the delicate flavour coconut. Earlier it was cooked in a clay oven simmering on stove tops. But modern day and age has Goan baking it in the oven.

Here’s A Fun Recipe For The Same

Chef Saransh’s recipe gives the cake a boozy finish and that’s reason enough for you to check this recipe out and make it STAT!

Ingredients For Batter

  • 250g Ghee
  • 250g Castor sugar
  • 3 Egg yolks
  • 1 tsp Vanilla essence
  • 1/2 cup Coconut, grated
  • 250g Suji
  • 1 tsp Baking powder
  • 1 tsp Cardamom powder
  • 1/2 tsp Nutmeg powder
  • 3 Egg whites
  • A few Vanilla essence drops

Ingredients For Old Monk Sauce

  • 1 cup Brown sugar
  • 3 tbsp Water
  • 1 tbsp Butter
  • 2 tbsp Fresh cream
  • 60ml Old monk
  • A pinch of Salt

Method 

First, take the ghee, castor sugar and beat it well. Then, in a separate bowl, take three egg yolks and a teaspoon of vanilla essence and mix these well. Add the mixture of egg yolks with the castor sugar mixture and leave it aside. Then, in a bowl take grated coconut, suji, baking powder, cardamom and nutmeg powder and mix it well. Next, add it ton the egg mixture and fold it in well. Then, take three egg white, add few vanilla essence drops and blend it till it forms stiff peaks. Fold the egg whites into the batter gently.  Let this batter rest for an hour. Then pipe it in greased moulds and bake it at 170 °C for 12 to 14 minutes.

To make the Old Monk Sauce, first, take brown sugar and water and bring it to a boil. Add in the butter and fresh cream and mix it well. Once this comes to a simmer, pour 60 ml Old Monk rum in the mixture and mix well. Add a pinch of salt and your sauce is ready. Finally, pour your Old Monk Sauce over the de-moulded cakes and your boozy Bathika Cake is ready.
