Let’s just say, chef Mudrit (@crafians) did something audacious. On his Instagram, he dropped a reel that’s got the internet chewing over more than just food. The reel is truly an ode to culinary imagination, as he can be seen assembling a gourmet-style “vada pav” with precision, artistry, and a twist of premium flair. No ‘vada’ or ‘pav’ in sight, the way you know them, but everything is still reminiscent of the classic.

When Vada Pav Went Fine Dining

He starts with a tart shell as the pav. It is layered neatly with portions of mashed potato, which is perfectly spiced with all the vada flavours. Instead of the usual chutneys, chef Mudrit converted them into gels and then layered the potato filling with them for a sweet-sour flavour. He then adds a touch of garlic powder turned into a caviar and a chura tuile to make the dish more aesthetic. Finally, he adds a dash of green chilli oil, describing it cheekily as “just fried green chilli but the other way around.”

The chura tuile adds a coral-like vibe to the dish, giving a gourmet twist to this otherwise simple Mumbai street food favourite. But wait, there’s more. On the side, a small plate of Toasted Besan Espuma lies there in all its glory, because why not!

Netizens Torn Between Awe And Loyalty

Netizens, however, weren’t sure whether to cheer, cry, or scroll. One top comment on this gourmet vada pav post read, “None can replace the Vada Pav!” To this, the chef replies warmly, “Nothing can ever replace Vada Pav, brother.”

Another user, more culinary-minded, praises everything but takes issue with the tart: “It should be something spongy and fermented like bread. You could even use waffle.”

Meanwhile, the crowd’s divided. One user gasps, “Mind blowing!! Who could have thought that Vada Pav would someday become fine dining!” Another deadpan asks, “Where is the vada???”

And then there’s the ultimate compliment: “Please open your restaurant. I would love to come here,” and it was liked more than 750 times.

But most of them were loyalists to the OG version, with one user tapping out: “Love original Vada Pav, scrolling down!” to which Shah, again, replied like a true sport: “I love original Vada Pav as well.”

Bottom line: this isn’t your everyday pav-hogging experience. It’s art-meets-snack, ambition plated with drama. You may not want to eat it, but you can’t stop watching it.
