Although you may find it absurd to spend ₹85,000 on vegetables, that is about how much one kilogramme of hop shoots will cost you. Hop shoots are the emerald-green tips of the hop plant, which are renowned as the most expensive vegetable in the world. Since its flowers are used to make alcoholic beverages, the hop plant is frequently linked to beer. However, after the flowers have been harvested, the hop shoots are still used. The culinary industry has instead given these green tendrils a place of their own.

On the international market, a kilogram of hop shoots can cost 1,000 GBP, which is equivalent to between ₹85,000 and ₹1 lakh. Hop plants don’t grow in straight rows, so picking the shoots requires stooping and scouring the ground. These tiny shoots have been compared to weeds or “runty herbs” because of their size. Another factor in the high price of hops is the fact that it takes hundreds of hop shoots to produce one kilogram.
