For a shop that has spent nearly a century and a half making one particular sweet, the number is almost as fascinating as the gulab jamun itself; the family says it sells roughly 1,000 kg every day.

Despite that scale, the family still wants the process to feel like it belongs to a traditional halwai shop, rather than a factory. The milk is sourced from outside, but the mawa and khoya are prepared in-house, which means one of the most important parts of the recipe is still made right there at the shop.

The result is not quite the gulab jamun you might expect.
Chaturbhuj’s version is known for being softer, spongier and considerably less syrupy than the standard gulab jamun. Instead of sitting in a pool of chashni, these are soaked and then allowed to dry, leaving them moist without becoming drippingly sweet. Cardamom and saffron add to the flavour.

There is also something wonderfully old Jodhpur about where you find it. The shop sits on Pungal Pada Road, inside Jalori Gate, in the city’s crowded old-city lanes. This is not the kind of place where you necessarily sit down for an elaborate dessert experience. You go in, ask for gulab jamun, get your box and get out, often with enough to take home. Older accounts of the shop describe customers ordering from the road itself.
And clearly, people don’t just buy them for themselves. Visitors have been known to carry boxes back home, with some even taking them along for family and friends elsewhere.
