We Relished Authentic Sev Usal With Archana Jahagirdar In Vadodara

For the first time, our Editor-in-Chief, Kamiya Jani, was in Vadodara, Gujarat. As a food and travel enthusiast, we explored the city as an avid traveller would. This time, we had Archana Jahagirdar, the founder and Managing Partner of Rukam Capital, with us for an episode of Stories From Bharat. From exploring Laxmi Vilas Palace to eating at famous spots, it was a wholesome experience. Of course, we began our food trail with some tasty sev usal; read on to learn about the eatery.

Sev Usal With Archana Jahagirdar In Vadodara

Situated on the banks of the Vishwamitri River, Vadodara serves lip-smacking sev usal. It is one of the top-listed food items to eat in this city. We made our way to Jay Mahakali Sev Usal Center on Palace Road for our first food spot of the day.

This 35-year-old popular eatery serves varieties of sev usal. Yes, just this particular dish, and we couldn’t wait to dig into the appetising sev usal in front of us. Famished souls, Kamiya and Archana, quickly found out that they underestimated the usal’s spiciness! Was that going to stop the foodies from polishing off their plates? Nope!

Her Thoughts On The Indian Food Industry

While eating the sev usal, Archana Jahagirdar spoke about her views on the Indian food market. She reflected on how traditional Indian dishes can expand their flavours with countless other variations. She said, “In India, we can build many QSRs (quick-service restaurants) because there are a variety of cuisines.”

Archana elaborated that she has invested in a famous burger brand called ‘Burger Singh’ which solely markets and sells Indianised burgers. At the end of the day, the audience in our country wouldn’t appreciate American-style burgers as much as they would love an Indianised version. She said, “Ultimately, Indians like Indian flavours. It is very important to understand the customer and their palate.” We 100% agree with this statement.
