If you’re a food lover and enjoy trying different dishes, you’ve probably already heard about tofu. But have you ever tried fermented tofu? Fermented tofu is a popular Chinese delicacy that makes your food extra delicious. Read on to know exactly what it is and how you can make it at home!

What Is Fermented Tofu?

Fermented tofu is a traditional East Asian food made by ageing tofu with special moulds and then storing it in brine with salt, rice wine, and spices. It has a soft texture and a strong, savoury umami flavour. This fermented tofu is also known as furu or Chinese “soy cheese.”

It is usually not eaten on its own because of its strong taste. Instead, it is used as a condiment to add flavour to dishes. People use it in sauces, dips, stir-fries, and marinades. A small piece is enough to enhance the taste of soups, vegetables, and meats.

How To Make This At Home?

Ingredients

  • Firm tofu
  • Water
  • Salt
  • Sugar 
  • Vodka or rice wine
  • Chili flakes

Method

1. As per Full of Plants recipe, first, prepare the tofu by boiling it in salted water for 3 to 4 minutes.
2. After boiling, place the tofu between paper towels and press it with a heavy object for about 1-1.5 hours to remove water.
3. Next, cut the tofu into small 1-inch cubes and arrange them on a plate. Make sure there is a space between each piece.
4. Then, cover it with a paper towel and plastic wrap, and keep it in a warm, dark place for 2to 3 days to ferment.
5. After fermentation, prepare the brine by boiling water with salt and sugar, then letting it cool. Add vodka or rice wine once cooled. You can also coat the tofu cubes with chilli flakes for extra flavour.
6. Finally, place the fermented tofu cubes into a clean glass jar and pour the brine over them. Close the jar and store it in a cool place for at least 3 weeks.
