Urban Degh Preserves Old Indian Recipes

Our Curly Tales team visited Urban Degh in Gurgaon, a restaurant that feels like a museum of India’s old recipes. This place serves delicious North India and Mughlai cuisine. The eatery is making continuous efforts to preserve traditional recipes that are slowly being forgotten over time. While speaking with us, the restaurant’s owner shared that in a fast-paced city like Gurgaon, people often prefer dishes that can be prepared quickly. However, he believes that this is not the right approach to cooking.

He explained that slow cooking does not simply mean cooking food slowly; it is about following the right process. According to him, food needs time to be properly marinated, prepared, and cooked to bring out its authentic flavours.
