Chef Kunal Kapur decided to share his favourite soup recipe, which feels like a warm hug to him. Here’s how one can make roasted tomato soup at home this winter.

Ingredients

  • 10 Tomatoes
  • 1 red capsicum
  • 1 small piece of ginger
  • ½ Onion
  • 1 green chilly
  • 5 black peppers
  • 5-7 cloves of garlic
  • Some basil leaves
  • 2 tbsp Oil
  • 1 cup water
  • 2 tbsp Makhan
  • 2 tbsp cream
  • Salt to taste

Method

  • Take a baking tray, cut 10 small-sized tomatoes into halves, and spread them on the tray. Now keep half-cut capsicum, ginger, onions, green chillies, garlic cloves, black pepper, and basil leaves. 
  • Lastly, sprinkle some salt and drizzle it with some oil. 
  • Now microwave it for 25 minutes at 200 °C.
  • Add this to a mixer grinder and make a fine paste. Strain this paste. 
  • Take a pan, add some water, add the tomato paste, and mix it to bring in a soup-like consistency. 
  • Add makhan, basil leaves, and cream and let it boil for a minute. 
  • Serve it by garnishing it with some cream on top!
