1. Butternut Squash Risotto With Applewood Smoked Chicken & Pan-Seared Vegetables

Ingredients:

  • Applewood- 10 gm
  • Beetroot- 2 pieces
  • Butter
  • Butternut Squash- 200 gm
  • Carrot- 1 pc
  • Chicken
  • Cream
  • Garlic- 5 gm
  • Green zucchini- 1 pc
  • Oil
  • Onion- 10 gm
  • Parmesan
  • Pepper
  • Risotto- 1/2 cup
  • Rosemary
  • Salt
  • Thyme
  • Yellow zucchini- 1 pc

Recipe:

  • Start by making the beetroot puree. Boil one beetroot with a rosemary sprig in it.
  • After the beetroot boils and softens, drain it and make a puree out of it.
  • To make the butternut squash puree, you need to vacuum pack the butternut. Also, put 2 thyme sprigs into it and blanch everything for some time.
  • Then make a puree out of it.
  • Now cut all the vegetables and blanch them.
  • Take a pan, heat it, and temper all the cut vegetables with butter. Also, add some garlic and thyme to the veggies.
  •  Marinate the chicken with garlic, onion, oil, and thyme for about 15 minutes.
  • Take another pan and add oil to it. After the pan gets heated up, keep on adding butternut squash, celery, garlic, onion, and thyme.
  • Then add the risotto and vegetable stock to it.
  • Cook everything well till the risotto gets cooked well.
  • Lastly, add some cream and the butternut puree with some butter and seasoning.
  • After completing all these steps, grill the marinated chicken. Use the applewood to smoke it.

2. Red Velvet Cake

Ingredients:

  • Red velvet sponge mix – 100gms
  • Whipped cream – 75gms
  • Cheese mascarpone – 15gms
  • Cream cheese – 20gms
  • Icing sugar – 15gms
  • Sugar syrup – 15ml
  • White chocolate compound – 30gms
  • Cardamom powder – 1 gm

Recipe:

  • Start by making the sponge cake. Take a bowl and add 100gms of red velvet pre-mix, oil, and water to form a batter with no lumps.
  • Take a cake mould and grease it with a thin layer of melted unsalted butter.
  • Meanwhile. preheat the microwave oven for 5 minutes at 180 degrees.
  • Pour the batter into the mould and put it into the oven.
  • For the frosting, add 15gms of cheese mascarpone, 20gms of
    cream cheese, 75 gm of whipped cream, 1 gm of cardamom powder, and 15gms of icing sugar nicely.
  • Once the sponge cake is baked and cooled, take it out of the butter paper and cut it into a cute heart shape.
  • Add the frosting and garnish the cake with some cake and white chocolate crumbles on each side of the cake.
  • You can even add some white edible pearl chocolate!
