Baklava, a Mediterranean delight, offers a delicious departure from traditional Diwali sweets. While classic Indian sweets hold a special place, Baklava’s golden layers symbolise the festival’s luminosity. The Perfect Baklava Rolls Recipe

Ingredients:

For the Syrup:

  • 2 cups sugar
  • 1 cup water
  • A squeeze of lemon

For The Baklava Rolls:

  • 1 packet of phyllo dough
  • 1 cup of good-quality butter
  • Finely ground pistachios and almonds

Instructions:

1. Prepare The Syrup:

  1. In a saucepan, combine 2 cups of sugar and 1 cup of water.
  2. Stir to dissolve the sugar and bring the mixture to a boil.
  3. Add a squeeze of lemon juice, which adds a nice, tangy contrast to the sweetness of the syrup.
  4. Reduce the heat and let the syrup simmer for 2-3 minutes. This allows it to thicken slightly and develop its flavour.
  5. Set the syrup aside to cool.

2. Prepare The Filling:

  1. Use a food processor to finely grind pistachios. You can also use almonds for added flavour and texture.
  2. Set aside the ground nuts.

3. Assemble The Baklava:

  1. Lay out your workspace with the packet of phyllo dough, melted butter, and ground nuts.
  2. Take one sheet of phyllo dough and place it on your clean working surface.
  3. Brush it with melted butter. This step is crucial, as it helps create flaky layers and adds a rich, buttery flavour.
  4. Place another sheet on top, overlapping it by about an inch. Repeat this process one more time.
  5. Lightly sprinkle some finely ground pistachios and almonds on top of the buttered phyllo sheets.
  6. Place a wooden stick at the folded end of the phyllo sheets and start rolling them tightly, beginning from the bottom and working your way up.
  7. To give your baklava a crinkled look, push the two ends of the roll towards the centre.
  8. Carefully slide the wooden stick out and place the rolled baklava on a greased baking tray.
  9. Use a sharp knife to slice each roll into 3 or 4 pieces.
  10. Brush the top of the baklava rolls with the remaining butter. This adds extra flavour and helps them brown nicely in the oven.

4. Baking The Baklava:

  1. Preheat your oven to 350°F (175°C).
  2. Place the tray of Baklava rolls in the oven and bake for 35-45 minutes, or until they turn golden brown and crispy.

5. Sweeten The Baklava:

  1. As soon as the baklava comes out of the oven, pour the room-temperature syrup over the hot rolls. The heat of the baklava will help it absorb the sweet syrup.
  2. Let the baklava rest for about 15 minutes to allow it to soak up the syrup and become even more flavorful.

6. Garnish And Serve:

  1. After the rest period, garnish your baklava with more crumbled pistachios for an extra layer of texture and flavour.
  2. Carefully dish out the baklava, plate it nicely, and serve.
