Puri’s are Indian deep flat flatbreads made of different kinds of flour but today we show you how to prepare these puris from potatoes at Dubai’s famous Carnival By Tresind, where executive chef Vinu Raveendran will show his modern touch  to this simple yet homely Indian dish

Ingredients: 

Potato Puri Dough
potato flacks (100 gms)
baking soda (1 gms)
potato starch (25 gms )
corn starch (50 gms)
water (200 ml)

Potato Vegetable 
ghee (1 tbsp)
cumin seeds (1 tsp)
green chilli (1 tsp)
ginger (1 tsp)
tomatoes (2 tbsp)
chilli powder (1/2 tsp)
turmeric (1/2 tsp)
boiled potatoes (1 cup)
salt (as per taste)
sugar (1/2 tsp)
chaat masala (1/2 tsp)
cumin powder (1/2 tsp)
coriander leaves (rough chopped)
lemon juice (1 tbsp)

Mango Pulp 
mango puree (1 tbsp)
condensed milk ( 3 tbsp)
saffron water (1 tsp)
green cardamom powder ( 1/2 tsp)

Recipe: 
Step 1: To Mix all the dry ingredients to make the Potato Puri Dough. Once the ingredients are mixed, keep the dough aside for 30 minutes & cover it with a wet cloth
Step 2: Once the dough is well rested, roll out the dough & cut into circle pieces & then fry the Potato Puris.
Step 3: Make the Potato Vegetable by mixing all the ingredients one y one
Step 4: Make the Aam Ras also called Mango Pulp by adding all the ingredients & mixing it well.
