Restaurant Style At Home Ep- 7: Patatas Bravas & Paella With Chef Miguel Blanco

Hola Amigos! If there is any Spanish dish that Indians like the most then it must be Patatas Bravas and Paella.
They are one of Spain’s signature dishes. So,  we have a chef from Spain who will show you how to make these dishes at home. We welcome Chef Miguel Blanco who is an Executive Sous Chef in one of Ritz Carlton Chain Of Hotels in Barcelona. Ingredients & Recipe 

Here are the ingredients and the recipe to make this delicious dish.

To Make Paella 

Olive oil (50 ml)

Red bell peppers (200gms)

Artichokes (2 peeled & cut)

Mushrooms (5 cut in cubes)

Beans (80gms)

Cook for 2 mins

Garlic (2 finely chopped)

Tomatoes (2 grated)

Paprika (1/2 tsp)

Soft grain rice (200gms)

Vegetable stock (600 ml)

Saffron (1/2 tsp)

Salt (as per taste)

Cook for 10 mins (on high flame) and then cook for 8 mins (on medium flame)

More ingredients 

Peas (35gms)

Do not stir the paella

Rosemary (1)

Cover it with cloth for 4-5 mins

Aliolio paste (garnishing)

To Make  Patatas Bravas (Tapas) 

Potatoes (250gms peeled & chopped)

Dry the potatoes & pre-heat for 10 mins

To Make The Bravas Sauce 

Olive oil (20 ml)

Garlic (1)

Red chili (1)

Rosemary (1)

Bay leaves (1)

Tomato sauce (100 ml)

Cook for 15- 20 mins

To Make Alioli Sauce 

Egg (1)

Salt (a pinch)

Garlic (1)

Lemon juice (1 tsp)

Vegetable oil (100 ml)

Grind into a paste

Keep the potatoes and set aside for 3 to 4 minutes. You can then grind the Bravas sauce till the consistency is smooth.  Fry the potatoes at 180 degrees for 3 to 4 minutes. Check the potatoes if they are tender from inside and perfectly crispy. Start with the plating and sprinkle some salt along with some rosemary.  Garnish it with the Bravas Sauce & The Alioli Sauce.
