Here’s how you can make this delicious dessert at home:

Ingredients:

For the caramel:

  • 1 cup granulated sugar
  • 1/4 cup water
  • For the pudding:
  • 4 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 2 cans (use the empty condensed milk can for measuring) whole milk
  • 1 teaspoon vanilla extract

Method:

1. Prepare the caramel:

  • In a small saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves.
  • Let the mixture cook without stirring. Swirl the pan occasionally to ensure even caramelization. Cook until the mixture turns a golden brown colour.
  • Pour the caramel into a round cake pan or pudding mould, swirling to coat the bottom evenly. Set aside to cool and harden.

2. Make the pudding:

  • Preheat your oven to 350°F (175°C).
  • In a blender, combine the eggs, sweetened condensed milk, whole milk, and vanilla extract. Blend until smooth and well combined.
  • Pour the mixture into the prepared caramel-coated pan.

3. Bake the pudding:

  • Place the pan in a larger baking dish or tray. Fill the larger dish with hot water until it reaches about halfway up the sides of the pudding pan. This creates a water bath (bain-marie) for even cooking.
  • Carefully transfer the setup to the preheated oven and bake for approximately 50-60 minutes or until the pudding is set. You can test for doneness by inserting a toothpick into the centre; it should come out clean.
  • Remove the pudding from the oven and let it cool to room temperature.

4. Serve:

  • Once cooled, refrigerate the pudding for at least a few hours or overnight.
  • To serve, run a knife around the edge of the pan to loosen the pudding. Place a serving dish on top of the pan and quickly invert it to release the pudding with the caramel sauce on top.
  • Slice and serve the Brazilian pudim, enjoying the creamy texture and caramel flavour.
