The brain behind this innovative dessert is Chef Yajush Malik, a man whose culinary roots run deep into his family traditions. Growing up, Chef Yajush was no stranger to grand feasts, courtesy of his grandmother, an army wife who was well-versed in the art of entertaining. Social gatherings in their house featured sprawling spreads of delicious food. And with such feasts came the inevitable next-day leftovers, among them, heaps of jalebi.

Chef Yajush’s grandmother had a magical way of repurposing these leftover jalebis. She would top them with custard and bake them into what became known in their home as Jalebi Pudding. It was a dessert that young Yajush cherished and grew up enjoying.
