UAE To Launch A New Service That Detects Gluten In Food Products

Using Enzyme-Linked Immunosorbent Assay (ELISA) technology, the Dubai Central Laboratory (DCL) has developed a method for identifying gluten in different food items in UAE. The Dubai Municipality stated this on Tuesday, May 17th. Dubai Central Laboratory will be the first in the UAE to provide fast gluten detection. 

The Purpose Of The New Service 

The DCL’s new service ensures the accuracy of gluten-free food labels to protect consumers and assure product quality. However, many people in the UAE and elsewhere have gluten sensitivity and can’t eat gluten without becoming sick. Therefore, the new service verifies gluten-free label information to protect customers and ensure product quality.

In a press release, Dubai Municipality UAE stated, “DCL has always kept pace with recent security and quality standards developments. The new service is part of Dubai Municipality’s strategy that emphasises sustainable environmental and food resources, as well as community safety and health. Gluten is a combination of two grains’ proteins. It’s a sticky protein due to its binding capabilities. It contains gluten and prolamines. Glutenin and gliadin are wheat proteins.

Gluten is important in baking because, when mixed with water, it provides dough elasticity and structure. It helps bread rise when baking.
