A Michelin-star restaurant in Italy is serving this unique dessert. Designed to give you the feeling of inhaling fresh air, this dessert is a one-of-a-kind experience that will take your breath away! Here’s how it is made!

Fried air or Aria Fritta is a singular dessert that is being served at Feva, a Michelin-star restaurant in northern Italy. As you might have guessed, it is not literal air solidified and then somehow deep-fried. This dessert is made out of fried Tapioca skin and is then infused with ozone gas.

The tapioca skin is first boiled to make a distinct batter. The batter is then fried in oil to create a delicate puff of crispy tapioca skin. The chef makes sure to drain the puff of oil completely and thoroughly so as to not taint the diner’s experience.

This airy tapioca puff is then suffused with low levels of Ozone gas for about 10 minutes. The ozone gas infusion is what gives diners a unique aromatic flavour. The feeling is akin to that of inhaling fresh air when they eat this unique dessert.

This unique piece of culinary art is then served on a bed of cotton candy which makes the dessert look like a literal cloud. Finally, your childhood fantasy of tasting clouds can become a reality!
