This time, Chef Mohsin has shared his famous Hing Dhaniya Ke Chatpate Aloo recipe. And we’re taking notes.

Chargrilled meat sizzling on skewers and rich gravies simmering in pots are frequent. Often catering to die-hard carnivores, this time, Qureshi has shared a recipe that speaks to vegetarians.

His Hing Dhaniya Ke Chatpate Aloo is a breath of fresh air from the regular Aloo Matar or Methi Aloo. So, here’s how you can make the celebrity chef’s aloo dish straight out of the streets of Lucknow.

Ingredients

For Potato Marinade

  • 1 kg of baby potatoes
  • 1 spoon of turmeric powder
  • 2 spoons of salt

For the Tadka 

  • 2 spoons of desi ghee
  • 1 spoon of hing
  • 2 spoons of cumin
  • 2 spoons of coriander seeds
  • 3 whole red chillies
  • 200g of chopped onions
  • 2 spoons of yellow chilli powder
  • 1 spoon of turmeric
  • 1 spoon of red chilli powder
  • 2 spoons of coriander powder
  •  1 spoon of ginger chopped
  •  1 spoon of green chilli
  • 50g of coriander leaves
  •  1 spoon of amchur powder
  •  1 lemon

Method

First, half-boil the baby potatoes in a kadai with turmeric powder and salt. Once the potatoes are half-cooked, then strain the water and deep fry the potatoes.

Then, add ghee to a pan. Once the ghee sizzles, add cumin, coriander seeds and dried red chillies to make an aromatic tadka. When the tadka has a dark brown hue, add chopped onions. Sautee the onions in the spices. Then, add the red chilli powder, turmeric powder, coriander powder and finely chopped ginger.

Once the tadka is well combined, sprinkle finely chopped green chillies. Keep mixing this semi-dry spice mix. Finely add the deep-fried baby potatoes to the freshly prepared semi-dry mixture. Finish the dish with amchur powder and fresh coriander leaves. Squeeze lemon juice and your Hing Dhaniya Ke Chatpate Aloo is ready!

– Make sure the potatoes are deep-fried and crispy.
– Pair this dish with besan rotis.
