Indian-American writer and Top Chef host, Padma Lakshmi often takes to her Instagram to share delicious recipes with her fans. From teaching Selena Gomez to make masala chai to cooking Jollof rice, she often introduces foodies to different foods from across the world. This time, Padma Lakshmi prepared one of her all-time favourite dishes— the Filipino speciality, Chicken Adobo. Here’s all about this.

Padma Lakshmi Prepares Her Childhood Favourite Chicken Adobo

Taking to her Insta handle, @padmalakshmi, Padma Lakshmi shared a fun video of herself preparing Chicken Adobo. In the caption, Padma Lakshmi called it “one of her all-time favourite dishes”. The Top Chef host shared that some of her closest high school friends were Filipino-American. And she enjoyed Chicken Adobo at their homes when their parents made this for dinner. Padma Lakshmi describes the Filipino speciality to be luscious and tangy. And even claims that she can eat the sauce over rice forever.

Dressed in a casual white tank top and black bottoms with a white-feather print, Padma Lakshmi cooks Chicken Adobo. In the reel she describes the dish to be very simple. Where the chicken is marinated in vinegar and very basic spices. And then, she lets it cook down for around one hour and then serves it with rice. Now, isn’t this a super simple dish? The comments section was filled with Instagrammers appreciating this Filipino classic and recollecting fond memories of trying this chicken gravy dish with rice for the first time.

Here’s An Easy Recipe Of The Filipino Dish For You To Try At Home

If you’re curious to prepare this at home, then we have an easy recipe for you by Panlasang Pinoy.

Ingredients

  • 0.9 kg chicken
  • 8 tablespoons of soy sauce
  • 3 pieces of dried bay leaves
  • 5 garlic cloves
  • 4 tablespoons of white vinegar
  • 3 tablespoons of cooking oil
  • 1/4th teaspoon of salt
  • 1 teaspoon of sugar
  • 1.5 cups of water
  • 1 teaspoon of whole peppercorns

Method 

First, marinate the chicken in soy sauce and garlic in a large bowl and keep it aside for at least 1 hour. Next, in a cooking pot, pour the oil. When the oil is hot enough, then pan-fry the marinated chicken for 2 minutes on the side. Then, pour the remaining marinade, including garlic into the vessel. Add the water to the simmering chicken and bring it to a boil.

After this, add dried bay leaves and whole peppercorns. Simmer this concoction for 30 minutes or under the chicken tenderises. Then, add the white vinegar to the pot with the chicken. Stir this well and cook for 10 minutes. Finally, add sugar and salt. Give the concoction a final stir and turn the heat off. Your Chicken Adobo is ready! Enjoy it hot with rice.
