  • Start the cooking process of Sev Barfi by adding some ghee to a pan and saute the khoya. Keep some khoya aside.
  • After a few minutes, add milk and sugar and cook for a few more minutes. Cook till all the sugar granules dissolve well in milk. Ensure you are continuing on low heat.
  • Bring up the heat to a bit and let the milk boil properly.
  • Once boiled, turn down the flame to low and add some cardamom powder and saffron strands.
  • Next, add unsalted sev and cook again for a couple of minutes.
  • Next, turn off the gas and add the separate khoya to the pan. Add some rose water too. Mix well, cover the pan but not entirely, and let everything sit for about half an hour.
  • Then, take a plate and grease it well with ghee. Spread the barfi mixture generously and garnish with some rose petals, chopped almonds and pistachios, and silver vark.
  • Once sev barfi cools down, cut it into pieces and enjoy.
